My mom recently made this orzo pasta salad and I just had to share the recipe with you. The fresh ingredients and lemon dressing is so good! Orzo Pasta Salad
I couldn’t get enough of this orzo pasta salad last weekend. My mom used cucumber and sugar snap peas when she made this salad. I added some cherry tomatoes from my garden, and you could really add a variety of veggies to this salad. Depending on what you have in the house this salad would be great with asparagus, zucchini, corn, olives, or peppers. You could also add cheese to this salad like feta or mozzarella.
Orzo Pasta Salad
Ingredients
Dressing
- 1/4 cup Extra Virgin Olive Oil
- 1 Lemon Zested and Juiced
- 1 tbsp Dijon Mustard
- 1 tsp Red Wine Vinegar
- Salt
- Pepper
Salad
- 12 oz Orzo Pasta
- 1 Cucumber
- Sugar Snap Peas Sautéed
- Cherry Tomatoes
- Basil
Instructions
- Start making the dressing in a small bowl by combining the extra virgin olive oil, red wine vinegar, dijon mustard, lemon zest, lemon juice and salt and pepper. Set aside.
- Cook your pasta in salted boiling water until al dente. Drain the pasta and add to a bowl.
- Add the diced cucumber, cherry tomatoes (halved) and cooked sugar snap peas to the orzo.
- Add the dressing on top of the salad and top with some fresh basil, salt and pepper. Stir to combine.
