I’m finally sharing a new recipe! I was craving something with peanut butter and chocolate last weekend so I made these peanut butter cookie bars. And, since it’s St. Patrick’s Day this week I couldn’t pass up a themed recipe. These peanut butter cookie bars are delicious and pretty easy to make. Peanut Butter Cookie Bars
Many of you asked about these peanut butter bars when you saw them on my Instagram stories. So I’m really excited to share the recipe with you. A few things to note with the ingredients in this recipe. I would use regular (smooth) peanut butter to make these bars. However if you only have crunchy peanut butter (or if you just love crunchy peanut butter) you could use that as well.
I themed these bars for St. Patrick’s day with green candy coated chocolate pieces. You can obviously use a rainbow of colors for this recipe. I would also suggest peanut butter filled candy pieces in these bars! These would also be really good with mini chocolate chips or peanut butter chocolate chips. I also served these bars with a little Maldon sea salt on top. I’m a big fan of sweet and salty desserts.
Peanut Butter Cookie Bars
Ingredients
- 1/2 cup Butter softened
- 3/4 cup Peanut Butter I used regular (smooth) peanut butter
- 3/4 cup Brown Sugar Light or dark
- 1/2 cup Granulated Sugar
- 1 1/4 tsp Vanilla Extract
- 2 Eggs
- 2 cups All-Purpose Flour
- 3/4 tsp Baking Soda
- 3/4 tsp Salt
- 3/4 cup Chocolate Coated Candies
- 1/2 cup Chocolate Chips
Instructions
- Preheat your oven to 350 degrees F. Use an 8 in or 9 in square baking pan and grease the pan and line with parchment paper.
- In a large mixing bowl beat together the butter, brown sugar and granulated sugar.
- Add the eggs and the vanilla to the butter/sugar mixture. Mix until combined.
- Add the flour, baking soda and salt to the mixture. Stir the ingredients together with a spoon.
- Fold in the chocolate chips and candy coated chocolate pieces.
- Spread the dough in your prepared pan. Make sure you try and get the dough as smooth as possible.
- Bake for 25-30 minutes or until the edges are slightly browned. Allow to cool before cutting the bars.
