With the long weekend coming up we’re planning some bbq dinners with friends and family. What about you guys? I was thinking of a fun salad to use the fresh strawberries that are still in season and came up with this arugula salad. With strawberries, pistachios and feta along with a balsamic vinaigrette you just can’t go wrong. This salad is so easy to make and perfect for the 4th of July weekend. Arugula Salad Recipe
This salad is definitely a new favorite in our household. I love the spicy arugula with the sweet strawberries and salty feta cheese. This recipe can easily be altered if you prefer a different type of lettuce, nuts or cheese. You could use kale or spring greens in this salad or walnuts, pecans or sunflower seeds instead of pistachios. If you’re not a fan of feta cheese you could also use blue cheese, parmesan or cheddar in this recipe.
The dressing for this recipe is so good and pretty similar to my favorite salad dressing. Make sure you use a good balsamic vinegar for this recipe as it really makes a difference. Trader Joe’s has a really nice balsamic vinegar and a good price point.
Arugula Salad with Strawberries, Pistachios and Feta
Ingredients
Salad
- Baby Arugula
- Strawberries sliced
- Crumbled Feta Cheese
- Pistachios
Dressing
- 1/8 cup Extra Virgin Olive Oil
- 1/2 tbsp Maple Syrup
- 1/2 tbsp Dijon Mustard
- 1 tbsp Balsamic Vinegar
- 1 tsp Red Wine Vinegar
- 1/4 tsp Salt
- 1/4 tsp Pepper
Instructions
- In a large bowl combine the arugula, sliced strawberries, feta cheese and pistachios.
- In a small bowl whisk together the extra virgin olive oil, maple syrup, dijon mustard, balsamic vinegar, red wine vinegar, salt and pepper.
- Pour the dressing on the salad when you're ready to serve.
