Ok, if you love coffee and chocolate this recipe is for you. I combined my two favorite things and made these espresso chocolate chip cookies. This is a fun and easy recipe for a twist on classic chocolate chip cookies. I also added some flaky sea salt to the top of these cookies to give them that sweet and salty flavor. If you know me well you know I love coffee and chocolate. So combining them in these cookies is basically a dream come true for me. Depending on how much you love coffee flavoring you can alter the amount of instant espresso coffee powder to this recipe. Enjoy these cookies with an espresso in the afternoon for an instant pick-me-up.
Espresso Chocolate Chip Cookies
Ingredients
- 1/2 cup Butter softened
- 1/2 cup Granulated Sugar
- 1/2 cup Light Brown Sugar
- 1 tsp Vanilla Extract
- 1 Egg
- 1 1/2 cups All Purpose Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Baking Powder
- 1/4 tsp Salt
- 1 tbsp Espresso Instant Coffee Powder
- 3/4 cup Chocolate Chips
Instructions
- Preheat your oven to 375 degrees F. Line a baking sheet with a Silpat. If you don't have a Silpat you could also use parchment paper to ensure your cookies don't stick to the cookie sheet.
- In a medium sized bowl mix together the dry ingredients – flour, baking soda, baking powder, salt and espresso instant coffee powder.
- In a large bowl cream together the softened butter, granulated sugar and brown sugar.
- Add the egg and vanilla extract to the butter mixture and blend until mixed.
- Add the dry ingredients (a little at a time) and mix with a spoon.
- Add the chocolate chips.
- Use a cookie scoop to scoop the dough on the silpat lined baking sheet. Bake them for 7-9 minutes or until the edges are slightly brown. Don't overbake them!
- Let them sit on the pan for a couple of minutes before transferring them to a drying rack.
I would highly recommend using a silpat to make these cookies. The silpat helps prevent the cookies from sticking to your cookie sheet. Plus it’s super easy to clean the silpat and reuse for future baking projects.
