In case you were wondering I’m still re-inventing different ways to make banana bread. If you follow me you know I’ve created quite a few banana bread recipes (which are all really good). I had some fresh Michigan blueberries that need to be used, and some extra rip bananas so I whipped up this recipe. The fresh blueberries with the sweet bananas and hint of cinnamon is delicious. Trust me your family will love this blueberry banana bread recipe.
Blueberry Banana Bread
Baking in the kitchen is my form of therapy whenever I’m stressed or on edge. I love getting my hands dirty, trying a new recipe or creating my own recipe in the kitchen. Since I had blueberries and bananas on hand I thought this blueberry banana bread would be perfect. This recipe was easy to make and obviously tastes amazing. Serve it warm in the morning with some coffee and you’re all set to start the day.
Blueberry Banana Bread
Ingredients
- 2 cups All-Purpose Flour
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 3/4 tsp Cinnamon
- 1/2 cup Butter melted and cooled
- 1/2 cup Light Brown Sugar
- 1/2 cup Sugar
- 4 Ripe Bananas mashed
- 1 1/2 tsp Vanilla Extract
- 2 Eggs
- 1 cup Blueberries
- Cinnamon Sugar optional for topping
Instructions
- Preheat your oven to 350 degrees F. Grease a 9×5 loaf pan.
- In a large bowl combine your melted butter and sugars with a hand mixer. Mix well.
- Add the vanilla extract and the eggs to the butter mixture. Beat until well mixed.
- Add the mashed banana to the vanilla, eggs, butter and sugar mixture. Beat unitl well mixed.
- In a medium bowl combine the flour, baking soda, salt and cinnamon with a whisk. Slowly add this mixture to the wet ingredients and stir with a spoon or spatula. Don't overmix the batter!
- In the large bowl you used for the flour add the blueberries. Toss the blueberries in a little flour to ensure they don't sink to the bottom of the pan while baking.
- Fold the blueberries into the batter.
- Pour the batter into the prepared loaf pan. You can add some blueberries on top if you prefer. I also added some cinnamon sugar to the top of the batter before baking.
- Bake for 50-60 minutes or until a toothpick inserted in the bread comes out clean. Allow to cool for a few minutes before removing the bread from the loaf pan. Cool on a wire rack and enjoy!
