If you asked me what my favorite dessert is, key lime pie ranks pretty high. The sweet and tangy filling with the graham cracker crust is the absolute best. I wanted to switch up the traditional pie slice and make bars that are easy to hold and taste just as good. Scroll down for the recipe for these key lime pie bars!

Key Lime Pie Bars
The best part about these key lime pie bars is they aren’t difficult to make. The crust is very easy to assemble and you only need a few ingredients for the filling. I’ve talked about our love for Nellie & Joe’s key lime juice before, and you could totally use that for this recipe. I actually didn’t have the juice on hand (which is shocking for us), so I used juice from regular limes. You can use either for this recipe.

You can also find my recipe for key lime pie on the blog. The biggest difference between the pie and the bars is the crust. The crust on these bars are a little thicker so you can handle eating the bars with your hands. But the flavor is pretty much the same between the pie and bars. I like the idea of serving these bars for a spring or summer party (when that happens again).

When you serve these key lime pie bars I would suggest a lime wedge on top and maybe some additional lime zest and a dollop of whipped cream. Cory and I don’t like whipped cream (don’t get me started on this topic), so I didn’t use it for these bars. I should also say my nephews gave these bars a raving review, so this recipe is kid approved.
Key Lime Pie Bars
Ingredients
Crust
- 12 Graham Crackers
- 1 stick Salted Butter Melted
- 3 tbsp Granulated Sugar
Key Lime Pie Filling
- 1 14oz can Sweetened Condensed Milk
- 3 Egg Yolks
- Lime Zest I used 3 limes for the zest
- 1/2 cup Lime Juice From fresh limes or Nellie & Joe's key lime juice
Serving
- Lime Wedges optional
- Whipped Cream optional
- Lime Zest optional
Instructions
- Preheat your oven to 350 degrees F. Spray the bottom of your 8×8 pan with cooking spray and line with parchment paper. This will help the bars come out easily after baking and cooled.
- For the crust, start but crushing your graham crackers in a plastic bag. I like to use a rolling pin to crush the crackers in the bag. Add the crushed graham crackers to a bowl with your melted butter and sugar. Mix until the ingredients have come together and pour into the 8×8 pan. Press the crackers into the bottom of your pan to make the crust. Bake for 10-12 minutes and set on a wire rack to cool.
- To make the filling use a stand mixer or hand mixer with the whisk attachement. First whisk the egg yolks for a few minutes. Then add the sweetened condensed milk and whisk for another 2-3 minutes. Add the lime zest and slowly add the lime juice. Whisk for 2-3 minutes. Pour the filling on top of the crust and bake for 15-17 minutes.
- Allow the bars to cool on a wire rack and then place them in your refrigerator. Chill for at least 2 hours or overnight.
- Serve the bars with whipped cream, lime zest and a lime wedge on top.
