- 1/2 cup Lime Juice From fresh limes or Nellie & Joe's key lime juice

Preheat your oven to 350 degrees F. Spray the bottom of your 8x8 pan with cooking spray and line with parchment paper. This will help the bars come out easily after baking and cooled.
For the crust, start but crushing your graham crackers in a plastic bag. I like to use a rolling pin to crush the crackers in the bag. Add the crushed graham crackers to a bowl with your melted butter and sugar. Mix until the ingredients have come together and pour into the 8x8 pan. Press the crackers into the bottom of your pan to make the crust. Bake for 10-12 minutes and set on a wire rack to cool.
To make the filling use a stand mixer or hand mixer with the whisk attachement. First whisk the egg yolks for a few minutes. Then add the sweetened condensed milk and whisk for another 2-3 minutes. Add the lime zest and slowly add the lime juice. Whisk for 2-3 minutes. Pour the filling on top of the crust and bake for 15-17 minutes.
Allow the bars to cool on a wire rack and then place them in your refrigerator. Chill for at least 2 hours or overnight.
Serve the bars with whipped cream, lime zest and a lime wedge on top.
