Avocado toast might be basic, but it’s my go-to lunch these days. Not only is it quick and easy to make, but this avocado toast tastes delicious. Cory always knows if avocado toast is on a menu at a restaurant i’ll order it. I love switching up some of the toppings depending on what I have on hand, but this is my no fail option for making avocado toast. Scroll down for this recipe!

Avocado Toast Recipe
Like I mentioned above, I love making this avocado toast for a weekday lunch or breakfast on the weekend. I can’t get enough of the sourdough bread from Nantucket Bakery here in Grand Rapids, so I try to use that when making this avocado toast. You can use whatever bread you have on hand or prefer (english muffins or even bagels would be delicious).
Avocado Toast
Ingredients
- Sourdough Bread
- 1/2 Large Avocado
- 2 Eggs
- Arugula
- Salt
- Pepper
Instructions
- Toast your sourdough bread (my favorite is from Nantucket Bakery) in the toaster. You can really use whatever type of bread you prefer.
- Mash your avocado in a bowl with some salt and pepper.
- Cook your eggs over easy (this is what I love), but you can make your eggs however you prefer.
- Add your mashed avocado to the toasted sourdough bread. Add the eggs on top of the avocado and garnish with arugula, salt and pepper.
When I make avocado toast I love mashing the avocado with salt and pepper for some extra flavor. Sometimes I also use these GoVerden Perfectly Ripe Avocado Cups found at Sam’s Club if my avocado isn’t ripe. For the eggs, I prefer mine over easy/medium, you could do whatever you like. Even scrambled eggs would be great on this avocado toast!

Top your avocado toast with some arugula, salt and pepper for some extra seasoning. You could also add bacon to this! Leave a comment below letting me know if you made this recipe. I would love to know your thoughts.
