Valentine’s Day is just days away! My mom and I made these fun cookie bars together last weekend and my nephews LOVED them. These cookie bars were actually really easy to make, and fun to customize for the upcoming holiday. Scroll down to get the recipe for these Valentine’s Day cookie bars!
Valentine’s Day Cookie Bars Recipe
I’m all about holiday themed recipes, and these cookie bars might be my all-time favorite. Not only were my nephews obsessed with these bars, but Cory and I really loved them. If you’re planning a little celebration with your immediate family for Valentine’s Day, these cookies would be perfect to enjoy together. Cory and I are planning to get dressed up and enjoy our favorite lobster risotto with a good bottle of wine (and these cookie bars – if there are any left).
Valentine’s Day Cookie Bars
Ingredients
- 2 sticks Butter unsalted
- 1 cup Sugar
- 1 cup Light Brown Sugar
- 3 Eggs
- 1 1/4 tsp Vanilla Extract
- 3 cups All-Purpose Flour
- 3/4 tsp Baking Soda
- 3/4 tsp Salt
- 1 cup Valentine's Day Candy Coated Chocolate Pieces use a few more for the topping
- 1 cup Chocolate Chips use a few more for the topping
Instructions
- Preheat your oven to 350 degrees F
- I used two 9in aluminum square pans to make this recipe. You could also use a 9×13 aluminum pan. Line the pan or pans with foil or parchment paper and spray with cooking spray. Trust me this really helps to get the cookie bars out after they are cooked.
- In a stand mixer beat the butter, sugar and brown sugar together for 2-3 minutes until fluffy.
- Add the eggs and the vanilla extract to the butter mixture and continue to beat the ingredients together.
- Add your dry ingredients including the flour, baking soda and salt. Mix just until the dough has formed.
- With a spoon mix the chocolate chips and candy coated chocolate pieces into the dough.
- Using your hands press the dough into the pans in an even layer. Add a few more chocolate chips and candy coated chocolate pieces on top of the dough. This way you'll see some of these pieces after it's done baking.
- Bake for 25-30 minutes or until the edges are golden. Allow to cool before serving.
You could also use mini chocolate chips, chocolate chunks, white chocolate chips or even butterscotch chips in this cookie bar recipe. I like trying new combinations when I make recipe, so have some fun and use what you have on hand. This recipe can also be customized for any holiday like Christmas or Halloween.
