Anyone else love baking on a chilly rainy day? On those gray yucky days I really enjoy being in the kitchen trying new recipes. So last week I whipped up these oatmeal chocolate chip cookies that were a huge hit with my family. I brought some of these cookies to my nephews and parents and they couldn’t stop talking about how good they were. Scroll down to get the recipe for these delicious oatmeal chocolate chip cookies!
Oatmeal Chocolate Chip Cookies
If you’re a fan of chocolate chip cookies you’re going to love this recipe. I recently made these oatmeal raisin cookies, but this time I was craving chocolate. For this recipe I used a mix of dark chocolate chips and chocolate chunks. You could use whatever type of chocolate you prefer or have on hand for this cookie recipe. I loved the mix of chocolate chunks and chips when I made these cookies.
Oatmeal Chocolate Chip Cookies
Ingredients
- 1 cup All-Purpose Flour
- 3/4 tsp Cinnamon
- 1/4 tsp Salt
- 1/2 tsp Baking Soda
- 1 1/2 cups Old-Fashioned Rolled Oats
- 1/2 cup Butter Softened
- 1/2 cup Light Brown Sugar
- 1/4 cup Sugar
- 1 large Egg
- 1 1/4 tsp Vanilla Extract
- 3/4-1 cup Chocolate Chips I used a mix of chocolate chips and chocolate chunks
Instructions
- In a medium/large bowl start by mixing together the dry ingredients including the flour, cinnamon, salt, baking soda and old-fashioned rolled oats. Set this bowl aside.
- Beat the butter, light brown sugar and sugar together. You can use a large bowl with a hand mixer or use a stand mixer to beat these ingredients together.
- Beat the egg and vanilla extract in the butter mixture.
- Add the dry ingredients to the butter mixture a little at a time until combined. Don't overmix!
- Add the chocolate chips or chocolate chunks to the dough and stir together.
- Cover the bowl and refrigerate the dough for 20 minutes.
- Preheat the oven to 350 degrees and line a cookie sheet with parchment paper or silicone baking mat.
- Use a muffin scoop to scoop the dough on the cookie sheet. Bake for 9-12 minutes or until the cookies are slightly brown around the edges.
- Allow the cookies to cool for a few minutes before transfering them to a wire rack.
One tip I’ve learned when making cookies is it’s important to chill the dough. At a minimum allow the cookie dough to chill in your refrigerator for 20 minutes. You could also put the dough in the refrigerator over night. This allows the flavors of the dough to really meld together and allows to cookies to not spread out too much when baking. Trust me, don’t skip the part of chilling your cookie dough.
These cookies have that soft texture I really enjoy so make sure you don’t over bake them. Just when the edges start to turn brown take them out of the oven. The slightly crisp outside of the cookie and the gooey middle is my favorite.
