My ideal morning includes a homemade blueberry muffin, Natalie’s orange juice, and a steaming hot cup of coffee. I just LOVE muffins in the morning and these blueberry muffins are my all-time favorite. I love the burst of blueberries, the warm vanilla flavor and crumbly texture. Blueberry Muffins
If you can find fresh local blueberries I would highly recommend those for these muffins. I picked blueberries last summer and froze some of the berries to use for recipes like this. If you use frozen blueberries for this recipe keep them frozen instead of letting them thaw. This works better to not turn the entire dough a pink color from the berries. One of my favorite thing about these muffins is the slight hint of cinnamon and vanilla flavor. With the blueberries this is such a wonderful combination in these muffins.
Blueberry Muffins
Ingredients
- 4 tbsp Butter melted
- 1 Egg
- 6 tbsp Buttermilk
- 1 tbsp Vanilla Extract
- 1 cup All-Purpose Flour
- 1/4 cup Sugar
- 1/2 tbsp Baking Powder
- 1/4 tsp Salt
- 1/8 tsp Cinnamon
- 1/4 cup Light Brown Sugar
- 3/4 cup Blueberries
Instructions
- Preheat your oven to 400 degrees F. Line a muffin tin with paper liners.
- In a small or medium sized bowl melt the butter. Let the butter cool slightly then add the egg, buttermilk, and vanilla extract. Whisk these ingredients together. Set this aside.
- In a large bowl combine the dry ingredients including the flour, sugar, baking powder, salt, cinnamon and light brown sugar.
- Add the butter mixture to the flour mixture and mix together. Don't over mix!
- Fold in the blueberries. Again, don't over mix!
- Using a cookie scoop, scoop the batter into your muffin tin. Bake the muffins for 17-20 minutes or until a toothpick inserted in the center of the muffins comes out clean.
- Allow the muffins to cool on a rack and then enjoy!
