These scotcharoos are the absolute best…trust me. My mom made these often when we were little, and I still love them to this day. The mix of butterscotch, chocolate and peanut butter flavors are a perfect combination in this treat. Plus, the best part is this recipe is super easy to make for a quick fall dessert.

Recipe for Scotcharoos
If you love the traditional Rice Krispie Treats these are a fun twist using peanut butter and chocolate instead of marshmallows. The cereal almost takes on a caramel-like flavor with the sugar and corn syrup which then gets mixed with the peanut butter. I would suggest using creamy peanut butter for this recipe (I used Jif), but you could try crunchy if you prefer.
Scotcharoos
Ingredients
- 5 1/2 cups Puffed Rice Cereal
- 1 cup Sugar
- 1 cup Light Corn Syrup
- 1 cup Creamy Peanut Butter
- 3/4 cup Semi-Sweet Chocolate Chips
- 3/4 cup Butterscotch Chips
Instructions
- Prepare your 9×13 baking dish by heavily greasing the pan. I used butter to grease the pan to ensure the bars don't stick.
- In a medium/large saucepan add the sugar and light corn syrup. On medium heat stir until the sugar has melted and the mixture just starts to boil. Remove from the heat.
- Add the peanut butter and stir until it becomes a thick sauce. Then add the puffed rice cereal. Stir to combine.
- Transfer the peanut butter cereal mixture into your 9×13 pan. I use a ziploc bag on my hand to press the cereal into the pan.
- In a microwave safe bowl add the chocolate and butterscotch chips. Microwave for 30 seconds and then stir. Repeat this until they are melted.
- Pour the chocolate butterscotch mixture on the cereal bars. Allow to cool on your counter or in the fridge before serving.
Before serving these scotcharoos, let them cool on your counter for at least an hour (or until the chocolate/butterscotch mixture cools). If you need these ASAP you could also put them in your refrigerator. Cut them into squares (or use a cookie cutter to cut fun shapes) and enjoy!
