Lemon Pasta
This lemon pasta is perfect for a spring dinner. The fresh lemon and basil really make this dish taste amazing. Enjoy!

- 1 lb. Linguine Pasta You could also use Spaghetti, Fettuccine or Bucatini noodles
- 2 Lemons Zested and Juiced
- 4 tbsp Butter
- 2 tbsp Extra Virgin Olive Oil
- 1 1/2 cups Fresh Parmesan Cheese Grated
- Fresh Basil
- Salt
- Pepper
Fill a large pot with water and add some salt. Bring to a boil. Add pasta and cook until al dente. Save about a cup of the pasta water before you drain the pasta.
In the meantime zest 2 lemons and juice the lemons.
In a large saucepan melt the butter over medium heat. Add the extra virgin olive oil. Once melted add the pasta, lemon zest, lemon juice and 1 cup of the parmesan cheese. Add the pasta water as needed. Toss until combined.
Serve with fresh basil, some parmesan cheese, a little olive oil and pepper.
