Lemon Pasta

This lemon pasta is perfect for a spring dinner. The fresh lemon and basil really make this dish taste amazing. Enjoy!

Ingredients

  • 1 lb. Linguine Pasta You could also use Spaghetti, Fettuccine or Bucatini noodles
  • 2 Lemons Zested and Juiced
  • 4 tbsp Butter
  • 2 tbsp Extra Virgin Olive Oil
  • 1 1/2 cups Fresh Parmesan Cheese Grated
  • Fresh Basil
  • Salt
  • Pepper

Instructions

  • Fill a large pot with water and add some salt. Bring to a boil. Add pasta and cook until al dente. Save about a cup of the pasta water before you drain the pasta.
  • In the meantime zest 2 lemons and juice the lemons.
  • In a large saucepan melt the butter over medium heat. Add the extra virgin olive oil. Once melted add the pasta, lemon zest, lemon juice and 1 cup of the parmesan cheese. Add the pasta water as needed.  Toss until combined.
  • Serve with fresh basil, some parmesan cheese, a little olive oil and pepper.
