Cory and I LOVE trying new pasta dishes every week. One of our recent favorites was this lemon pasta that’s super easy to make for a weeknight meal. The mix of fresh lemon, basil and parmesan cheese in this pasta is so good! Scroll down to get my favorite recipe for lemon pasta!
Lemon Pasta
After our honeymoon in Capri, Cory and I have loved adding fresh lemon to our pasta dishes. We ate dinner at Da Paulino and enjoyed fresh pasta under lemon trees. It was probably the highlight dinner of our trip to Italy. This lemon pasta brought us right back to our time in Italy.
Lemon Pasta
Ingredients
- 1 lb. Linguine Pasta You could also use Spaghetti, Fettuccine or Bucatini noodles
- 2 Lemons Zested and Juiced
- 4 tbsp Butter
- 2 tbsp Extra Virgin Olive Oil
- 1 1/2 cups Fresh Parmesan Cheese Grated
- Fresh Basil
- Salt
- Pepper
Instructions
- Fill a large pot with water and add some salt. Bring to a boil. Add pasta and cook until al dente. Save about a cup of the pasta water before you drain the pasta.
- In the meantime zest 2 lemons and juice the lemons.
- In a large saucepan melt the butter over medium heat. Add the extra virgin olive oil. Once melted add the pasta, lemon zest, lemon juice and 1 cup of the parmesan cheese. Add the pasta water as needed. Toss until combined.
- Serve with fresh basil, some parmesan cheese, a little olive oil and pepper.
To make this pasta you can use your favorite type of pasta. I would recommend using Linguine, Spaghetti, Fettuccine, or Bucatini pasta for this recipe. The fresh ingredients in this pasta really make a difference. Fresh lemon, fresh basil and fresh parmesan that’s grated truly make this dish taste amazing.
