Peanut Butter Cookie Bars

These cookie bars are really easy to make and fun for a holiday like St. Patrick's Day. I used green candy coated chocolate pieces and it was perfect with the peanut butter.

Ingredients

  • 1/2 cup Butter softened
  • 3/4 cup Peanut Butter I used regular (smooth) peanut butter
  • 3/4 cup Brown Sugar Light or dark
  • 1/2 cup Granulated Sugar
  • 1 1/4 tsp Vanilla Extract
  • 2 Eggs
  • 2 cups All-Purpose Flour
  • 3/4 tsp Baking Soda
  • 3/4 tsp Salt
  • 3/4 cup Chocolate Coated Candies
  • 1/2 cup Chocolate Chips

Instructions

  • Preheat your oven to 350 degrees F. Use an 8 in or 9 in square baking pan and grease the pan and line with parchment paper.
  • In a large mixing bowl beat together the butter, brown sugar and granulated sugar.
  • Add the eggs and the vanilla to the butter/sugar mixture. Mix until combined.
  • Add the flour, baking soda and salt to the mixture. Stir the ingredients together with a spoon.
  • Fold in the chocolate chips and candy coated chocolate pieces.
  • Spread the dough in your prepared pan. Make sure you try and get the dough as smooth as possible.
  • Bake for 25-30 minutes or until the edges are slightly browned. Allow to cool before cutting the bars.
