Peanut Butter Cookie Bars
These cookie bars are really easy to make and fun for a holiday like St. Patrick's Day. I used green candy coated chocolate pieces and it was perfect with the peanut butter.

- 1/2 cup Butter softened
- 3/4 cup Peanut Butter I used regular (smooth) peanut butter
- 3/4 cup Brown Sugar Light or dark
- 1/2 cup Granulated Sugar
- 1 1/4 tsp Vanilla Extract
- 2 Eggs
- 2 cups All-Purpose Flour
- 3/4 tsp Baking Soda
- 3/4 tsp Salt
- 3/4 cup Chocolate Coated Candies
- 1/2 cup Chocolate Chips
Preheat your oven to 350 degrees F. Use an 8 in or 9 in square baking pan and grease the pan and line with parchment paper.
In a large mixing bowl beat together the butter, brown sugar and granulated sugar.
Add the eggs and the vanilla to the butter/sugar mixture. Mix until combined.
Add the flour, baking soda and salt to the mixture. Stir the ingredients together with a spoon.
Fold in the chocolate chips and candy coated chocolate pieces.
Spread the dough in your prepared pan. Make sure you try and get the dough as smooth as possible.
Bake for 25-30 minutes or until the edges are slightly browned. Allow to cool before cutting the bars.
