Blueberry Banana Bread

This blueberry banana bread is perfect for breakfast or snack. The burst of fresh blueberries with the sweet banana bread is delicious. Trust me!

Ingredients

  • 2 cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 3/4 tsp Cinnamon
  • 1/2 cup Butter melted and cooled
  • 1/2 cup Light Brown Sugar
  • 1/2 cup Sugar
  • 4 Ripe Bananas mashed
  • 1 1/2 tsp Vanilla Extract
  • 2 Eggs
  • 1 cup Blueberries
  • Cinnamon Sugar optional for topping

Instructions

  • Preheat your oven to 350 degrees F. Grease a 9x5 loaf pan.
  • In a large bowl combine your melted butter and sugars with a hand mixer. Mix well.
  • Add the vanilla extract and the eggs to the butter mixture. Beat until well mixed.
  • Add the mashed banana to the vanilla, eggs, butter and sugar mixture. Beat unitl well mixed.
  • In a medium bowl combine the flour, baking soda, salt and cinnamon with a whisk. Slowly add this mixture to the wet ingredients and stir with a spoon or spatula. Don't overmix the batter!
  • In the large bowl you used for the flour add the blueberries. Toss the blueberries in a little flour to ensure they don't sink to the bottom of the pan while baking.
  • Fold the blueberries into the batter.
  • Pour the batter into the prepared loaf pan. You can add some blueberries on top if you prefer. I also added some cinnamon sugar to the top of the batter before baking.
  • Bake for 50-60 minutes or until a toothpick inserted in the bread comes out clean. Allow to cool for a few minutes before removing the bread from the loaf pan. Cool on a wire rack and enjoy!
