Morning Glory Muffins

Ingredients

  • 1 cup vegetable oil
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2 cups grated carrots
  • 1 apple grated I used a Granny Smith
  • 1 8 oz can of crushed pineapple
  • 1/2 cup shredded coconut
  • 1/2 cup raisins
  • 2 1/4 cups all purpose flour
  • 1 1/4 cups sugar
  • 1 tsp cinnamon
  • 2 tsp baking soda
  • 1 tsp salt

Instructions

  • Preheat your oven to 350 degrees F. Line two muffin tins with liners.
  • In a large bowl whisk together the eggs, oil and vanilla extract. Add the carrots, apple, pinapple (drained), coconut and raisins. Stir just until incorporated.
  • In a medium sized bowl stir together the flour, sugar, cinnamon, baking soda and salt. Add these dry ingredients into the wet ingredients. Stir just until combined.
  • Scoop your batter into the prepared muffin tins using a small ice cream scoop. Bake the muffins for around 30 minutes or until a toothpick inserted in the center of the muffin comes out clean. Cool the muffins on a baking rack.
