If I had to pick my favorite muffin it would be a morning glory muffin. I know that might sound crazy, but I LOVE these muffins. One of my favorite morning glory muffins can be found at Cravings in Vero Beach, Florida. There’s just nothing better than a muffin and Natalie’s Orange Juice from Cravings in the morning. Seriously, these muffins are the absolute best for breakfast or an afternoon snack.
My favorite part about this recipe is you can easily customize and use what you have at home. I think a Granny Smith apple works best in these muffins, but if you have another apple on hand it would be totally fine. Also, if you love nuts you could easily add chopped pecans or walnuts to this recipe. You can also substitute yellow raisins or omit the raisins from these muffins. My nephews were obsessed with these muffins so I’m pretty sure they’re kid approved. But, I would suggest not mentioning the two cups of carrots in this recipe….
Morning Glory Muffins
Ingredients
- 1 cup vegetable oil
- 3 large eggs
- 2 tsp vanilla extract
- 2 cups grated carrots
- 1 apple grated I used a Granny Smith
- 1 8 oz can of crushed pineapple
- 1/2 cup shredded coconut
- 1/2 cup raisins
- 2 1/4 cups all purpose flour
- 1 1/4 cups sugar
- 1 tsp cinnamon
- 2 tsp baking soda
- 1 tsp salt
Instructions
- Preheat your oven to 350 degrees F. Line two muffin tins with liners.
- In a large bowl whisk together the eggs, oil and vanilla extract. Add the carrots, apple, pinapple (drained), coconut and raisins. Stir just until incorporated.
- In a medium sized bowl stir together the flour, sugar, cinnamon, baking soda and salt. Add these dry ingredients into the wet ingredients. Stir just until combined.
- Scoop your batter into the prepared muffin tins using a small ice cream scoop. Bake the muffins for around 30 minutes or until a toothpick inserted in the center of the muffin comes out clean. Cool the muffins on a baking rack.
