Ingredients

  • 2 cups All-Purpose Flour
  • 1/2 cup Granulated Sugar
  • 1/4 cup Light Brown Sugar packed
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/4 tsp Cinnamon
  • 3 Bananas very ripe
  • 1/4 cup Vanilla Greek Yogurt you can also use plain greek yogurt
  • 2 large Eggs
  • 1/4 cup Vegetable Oil
  • 1 tsp Vanilla Extract
  • CInnamon Sugar optional for the top
  • Walnuts optional
  • Chocolate Chips optional

Instructions

  • Preheat the oven to 350 degrees F. Spray your 9-inch loaf pan with cooking spray or use parchment paper to line the pan.
  • In a large bowl whisk together the flour, sugar, brown sugar, baking soda, salt and cinnamon.
  • In a separate medium sized bowl mash your bananas. Then add the Greek yogurt, eggs, vegetable oil and vanilla extract. Add your wet ingredients to the dry ingredients and stir just until the ingredients are combined. If you’re adding walnuts or chocolate chips fold them into the batter.
  • Pour your batter into the prepared loaf pan and sprinkle cinnamon sugar on top (this is optional but I love the flavor and the crispy top). Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool before serving. Enjoy!
