We’re big fans of banana bread in our house. Sometimes I think Cory lets the bananas go bad on purpose so that I’ll make him banana bread. Since I had some Greek yogurt (that I got cheap thanks to @dealsandstealsgr) I decided to try a new recipe and just had to share it with you. I think the Greek yogurt gives the banana bread some extra moisture and flavor that we really loved. Let me know if you try this recipe!
I have to be honest I’m not a fan of greek yogurt on it’s own. It’s too tangy for my taste, but in this banana bread recipe it’s a must. The yogurt adds some much needed moisture to the bread that I absolutely love. Trust me your family will love this recipe for greek yogurt banana bread!
Greek Yogurt Banana Bread
Ingredients
- 2 cups All-Purpose Flour
- 1/2 cup Granulated Sugar
- 1/4 cup Light Brown Sugar packed
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/4 tsp Cinnamon
- 3 Bananas very ripe
- 1/4 cup Vanilla Greek Yogurt you can also use plain greek yogurt
- 2 large Eggs
- 1/4 cup Vegetable Oil
- 1 tsp Vanilla Extract
- CInnamon Sugar optional for the top
- Walnuts optional
- Chocolate Chips optional
Instructions
- Preheat the oven to 350 degrees F. Spray your 9-inch loaf pan with cooking spray or use parchment paper to line the pan.
- In a large bowl whisk together the flour, sugar, brown sugar, baking soda, salt and cinnamon.
- In a separate medium sized bowl mash your bananas. Then add the Greek yogurt, eggs, vegetable oil and vanilla extract. Add your wet ingredients to the dry ingredients and stir just until the ingredients are combined. If you’re adding walnuts or chocolate chips fold them into the batter.
- Pour your batter into the prepared loaf pan and sprinkle cinnamon sugar on top (this is optional but I love the flavor and the crispy top). Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool before serving. Enjoy!
As I mentioned above you can definitely make this recipe your own by adding chopped walnuts or chocolate chips to this banana bread. We like to keep our banana bread pretty classic in our house, but adding the cinnamon sugar on top is something I would highly recommend. The extra cinnamon and sweetness to the top of the bread is pretty amazing. Just saying.
