For the Filling:
- 4 cups Strawberries cut in quarters
- 1/4 cup Sugar
- 1 tbsp Orange Zest
- 1 tbsp Orange Juice
- 2 tbsp Cornstarch
For the Topping:
- 1 cup All-Purpose Flour
- 3/4 cup Old Fashioned Oats
- 1/3 cup Sugar
- 1/3 cup Brown Sugar
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 1/2 cup Butter cold, cut into pieces
Preheat your oven to 350 degrees F. Use a 9x9 or 8x8 pie plate and grease the bottom of the plate. Set aside.
In a large bowl stir together the strawberries, sugar, orange zest, orange juice and cornstarch. Pour the strawberry mixture into your pie plate.
In a medium bowl combine the ingredients for the topping including the flour, oats, sugar, brown sugar, salt, cinnamon and butter. Using your hands, mix the ingredients until the butter is combined with the other ingredients. I leave the butter in pea size crumbles. Sprinkle this on top of the strawberry mixture.
Bake for 30-40 minutes or until the fruit is bubbly and the topping is slightly brown. Allow to cool before serving. Serve with vanilla ice cream on top.
