Monster Cookies

These monster cookies are the absolute best! My family couldn't get enough of these cookies and they are super easy to make.

Ingredients

  • 1/2 cup Salted Butter
  • 1/2 cup Sugar
  • 1/2 cup Light Brown Sugar
  • 1/2 cup Smooth Peanut Butter
  • 1 Egg At room temperature
  • 1 tsp Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1 1/4 cups Old-Fashioned Rolled Oats
  • 1/4 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 3/4 cup Candy Coated Chocolates
  • 1/4 cup Chocolate Chunks

Instructions

  • Preheat your oven to 350 degrees F. Prepare a baking sheet lined with parchment paper.
  • In a stand mixer or with a hand mixer, cream the butter and sugars together. Mix until the butter and sugar are both light and fluffy.
  • Add the smooth peanut butter, egg and vanilla extract and mix these ingredients with the butter and sugar.
  • In a medium sized bowl mix the dry ingredients including the flour, oats, baking powder, baking soda and salt. Add the dry ingredients to the wet ingredients. I like to add it a quarter at a time making sure the ingredients are mixed together.
  • Stir in the candy coated chocolates and the chocolate chunks to the cookie dough. Use a muffin scoop to scoop the dough onto your prepared baking sheet.
  • Bake the cookies for 10-15 minutes or until just brown around the edges. Allow the cookies to cool for a few minutes before transfering them to a drying rack to cool completely.
