Ingredients
1/2cupSalted Butter
1/2 cupSugar
1/2cupLight Brown Sugar
1/2cupSmooth Peanut Butter
1EggAt room temperature
1tspVanilla Extract
1cupAll-Purpose Flour
1 1/4cupsOld-Fashioned Rolled Oats
1/4tspSalt
1/2tspBaking Soda
1/2tspBaking Powder
3/4cupCandy Coated Chocolates
1/4cupChocolate Chunks
Instructions
Preheat your oven to 350 degrees F. Prepare a baking sheet lined with parchment paper.
In a stand mixer or with a hand mixer, cream the butter and sugars together. Mix until the butter and sugar are both light and fluffy.
Add the smooth peanut butter, egg and vanilla extract and mix these ingredients with the butter and sugar.
In a medium sized bowl mix the dry ingredients including the flour, oats, baking powder, baking soda and salt. Add the dry ingredients to the wet ingredients. I like to add it a quarter at a time making sure the ingredients are mixed together.
Stir in the candy coated chocolates and the chocolate chunks to the cookie dough. Use a muffin scoop to scoop the dough onto your prepared baking sheet.
Bake the cookies for 10-15 minutes or until just brown around the edges. Allow the cookies to cool for a few minutes before transfering them to a drying rack to cool completely.
