Lemon Blueberry Poppy Seed Bread + Orange Vanilla Glaze

This lemon blueberry poppy seed bread is so delicious. I love the hint of lemon flavor with the sweet blueberries. You can also make a sweet orange vanilla glaze for the top of this bread.

Ingredients

Bread

  • 1/2 cup Butter at room temperature
  • 1 cup Sugar
  • 3 Eggs at room temperature
  • Lemon Zest from 1 lemon
  • 2 cups All Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 2 tbsp Poppy Seeds
  • 1/2 cup Milk
  • Lemon Juice from 1 lemon
  • 1 1/4 cups Blueberries

Glaze

  • 1 cup Powdered Sugar
  • 1/8 cup Orange Juice
  • 1/2 tsp Vanilla Extract

Instructions

  • Preheat the oven to 350 degrees F. Prepare your loaf pan by greasing the bottom and sides of the pan.
  • In a large bowl beat together the softened butter and granulated sugar. Beat together until fluffy.
  • Add the eggs one at a time to the butter and sugar mixture.
  • Add the lemon zest to the butter mixture and beat to combine.
  • Combine the dry ingredients in a medium bowl including the flour, baking soda, baking powder, salt and poppy seeds. Set aside.
  • Combine the milk and lemon juice together in a mixing glass. Set aside.
  • Add a little of the dry ingredients to the butter mixture and mix together. Alternate with the milk/lemon juice and the dry ingredients until everything is mixed together.
  • Fold in the blueberries to the batter.
  • Add the batter to the prepared loaf pan and bake for 55-65 minutes or until a toothpick inserted in the middle comes out clean.
  • For the glaze mix together the powdered sugar, orange juice and vanilla extract. Add to the top of the bread while the bread is still slightly warm.
