This caprese salad is a go-to during the summer season. I love the crisp tomatoes with the creamy mozzarella cheese and sweet balsamic vinegar. Trust me this salad is perfec for a summer lunch.
Wash your tomatos and cut them 1/4 inch thick. Set aside.
Cut the mozzarella 1/4 inch thick. Make sure your mozzarella is cold before cutting it. Sometimes I put it in the freezer for a few minutes. Set aside.
Begin assmbling the salad on a plater. Alternate the tomato, mozzarella and basil.
Drizzle the salad with olive oil, balsamic vinegar, salt and pepper.
