In a Dutch oven add the apples, lemon juice, brown sugar, sugar, cinnamon and pinch of salt. Mix these ingredients together allow to sit for 20 minutes.
Next add the apple cider and 1/2 cup of water to the pot. Stir everything together and turn the stove on to medium/high heat.
Cook the apples for 15 minutes until they have softened.
In a small bowl combine the cornstarch and 2 tbsp of water to create a thick liquid.
Pour the cornstarch liquid into the apples and stir until thickened.
Add the vanilla extract, honey and butter to the apples. Mix together until combined and then turn off the heat.
Allow the apple pie filling to cool completely then pour the filling in a mason jar.
