Buckeyes

These bukeyes are a holidy staple in our household. The creamy peanut butter with the dark chocolate coating is delicious.

Ingredients

  • 3/4 cups Powdered Sugar
  • 1 1/2 cups Creamy Peanut Butter
  • 1/2 cup Salted Butter
  • 1 1/2 tsp Vanilla Extract
  • 1/2 tsp Salt
  • 12 oz Bag of Semi-Sweet Chocolate Chips
  • 1 tbsp Vegetable Shortening

Instructions

  • Line 2 baking trays with parchment paper.
  • Beat the powered sugar, peanut butter, butter, vanilla extract and salt with a hand mixer on medium until well blended.
  • Shape the mixture into one inch balls.  Set in a cool place to chill until firm.
  • Microwave the chocolate chips and shortening in a microwave-safe bowl for 45 seconds.  Stir until smooth.  If needed, microwave the mixture in additional 15 second increments.
  • Insert a toothpick into top center of a peanut butter ball. Dip 3/4 of the ball into the melted chocolate, leaving the top exposed.  Place the ball back onto the prepared tray. Remove the toothpick and smooth over the hole.  Repeat.  If the chocolate starts to harden, microwave for 10 seconds. Chill Buckeyes until firm.
