I think June might be my favorite month. With fresh strawberries at the farmers market, peonies in my backyard and long summer days it’s just the best. I recently stopped by the Fulton Street Farmers Market for some Michigan strawberries and made this super easy strawberry crisp for Father’s Day. Using Michigan strawberries is truly the best for this recipe because they are so sweet and flavorful. Scroll down to get the recipe for this strawberry crisp!

Strawberry Crisp
The Michigan strawberries are so good right now! I recently made strawberry jam with my mom and sister, and of course this strawberry crisp. If you love apple crisp during the fall, you’re going to love this strawberry crisp in the summer. You could also use frozen berries for this recipe, but because they are frozen you might have more liquid. I would recommend adding more cornstarch so the crisp doesn’t become soupy.

Strawberry Crisp
Ingredients
For the Filling:
- 4 cups Strawberries cut in quarters
- 1/4 cup Sugar
- 1 tbsp Orange Zest
- 1 tbsp Orange Juice
- 2 tbsp Cornstarch
For the Topping:
- 1 cup All-Purpose Flour
- 3/4 cup Old Fashioned Oats
- 1/3 cup Sugar
- 1/3 cup Brown Sugar
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 1/2 cup Butter cold, cut into pieces
Instructions
- Preheat your oven to 350 degrees F. Use a 9×9 or 8×8 pie plate and grease the bottom of the plate. Set aside.
- In a large bowl stir together the strawberries, sugar, orange zest, orange juice and cornstarch. Pour the strawberry mixture into your pie plate.
- In a medium bowl combine the ingredients for the topping including the flour, oats, sugar, brown sugar, salt, cinnamon and butter. Using your hands, mix the ingredients until the butter is combined with the other ingredients. I leave the butter in pea size crumbles. Sprinkle this on top of the strawberry mixture.
- Bake for 30-40 minutes or until the fruit is bubbly and the topping is slightly brown. Allow to cool before serving. Serve with vanilla ice cream on top.
To serve the strawberry crisp I would recommend having some vanilla bean ice cream on top. Slice up a few extra berries to put on the side for presentation and you’re good to go. If you’re hosting a dinner this summer this strawberry crisp would be the perfect dessert to serve your friends and family.
