I love a quick and easy lunch recipe during the summer. So, this caprese salad is my go-to for a refreshing and delicious meal. I love using fresh tomatoes from my garden or the Fulton Street Farmers Market for this salad. I also keep a basil plant in my home or garden so I can use basil throughout the summer for this salad, pizza or to make pesto. The combination of the fresh tomatoes with the creamy mozzarella cheese, and the sweet balsamic vinegar is the absolute best in this salad.

This caprese salad takes me right back to my honeymoon in Rome, Italy. If I close my eyes while eating this salad I can still imagine the outdoor patio with a guitar playing in the background on the streets of Rome. Making this salad at home is so quick and easy that it’s a no-brainer for lunch. It’s also great for entertaining and easy to make ahead of time.
If you need a good balsamic vinegar I really like the one from Trader Joe’s. It adds just enough sweetness and tart aftertaste. This is one of those ingredients I love to use for this vinegar on olive oil with bread or making a dressing for a salad.
Caprese Salad
Ingredients
- 3-4 Vine Ripened Tomatoes
- 1 8 oz Fresh Mozzarella Ball
- 10-15 Basil Leaves
- Extra Virgin Olive Oil
- Salt
- Pepper
- Balasamic Vinegar
Instructions
- Wash your tomatos and cut them 1/4 inch thick. Set aside.
- Cut the mozzarella 1/4 inch thick. Make sure your mozzarella is cold before cutting it. Sometimes I put it in the freezer for a few minutes. Set aside.
- Begin assmbling the salad on a plater. Alternate the tomato, mozzarella and basil.
- Drizzle the salad with olive oil, balsamic vinegar, salt and pepper.
