Anyone else in full on holiday baking mode? I’ve already made sugar cookies, a white chocolate snack mix, and these delicious buckeyes. I’m pretty sure these peanut butter chocolate treats go by a few different names, but we call them buckeyes. The best part is these buckeyes are super easy to make and don’t require a ton of ingredients. Scroll down for the recipe!
Buckeyes Recipe
You may have seen this buckeyes recipe in The GR Guide holiday issue last month. But, if you missed it I’ve got the recipe right here. I always assumed these buckeyes were difficult to make, but they really aren’t too tricky to make. Just make sure to chill your peanut butter balls before dipping them into the chocolate. You can also have kids help with rolling the peanut butter balls or dipping them into the chocolate.
Buckeyes
Ingredients
- 3/4 cups Powdered Sugar
- 1 1/2 cups Creamy Peanut Butter
- 1/2 cup Salted Butter
- 1 1/2 tsp Vanilla Extract
- 1/2 tsp Salt
- 12 oz Bag of Semi-Sweet Chocolate Chips
- 1 tbsp Vegetable Shortening
Instructions
- Line 2 baking trays with parchment paper.
- Beat the powered sugar, peanut butter, butter, vanilla extract and salt with a hand mixer on medium until well blended.
- Shape the mixture into one inch balls. Set in a cool place to chill until firm.
- Microwave the chocolate chips and shortening in a microwave-safe bowl for 45 seconds. Stir until smooth. If needed, microwave the mixture in additional 15 second increments.
- Insert a toothpick into top center of a peanut butter ball. Dip 3/4 of the ball into the melted chocolate, leaving the top exposed. Place the ball back onto the prepared tray. Remove the toothpick and smooth over the hole. Repeat. If the chocolate starts to harden, microwave for 10 seconds. Chill Buckeyes until firm.
